Walking and running are the activities for which the counting of steps is most accurate.
But every movement counts, from gardening to DIY, cleaning to dancing! For any activity, the closer your smartphone is to your body, the better it will detect movement and the more accurate the count will be (step counting will be less accurate in a bag than in your pocket)!
